Apple strudel has always been a tradition at my house...before the wonderful invention of frozen phyllo sheets we would have to make the dough by hand and all the women of the house would have to take part in stretching it out over the dining room table.
Ah the good ol'days..NOT!!!
You will need a bag of apples..(Macintosh has the best flavour for strudel)
1 cup of white and brown sugar
1 1/2 cup of graham cracker crumbs
2 tablespoons vanilla extract
3 tablespoons of cinnamon
1 tablespoon of pumpkin spice
and 1/2 cup of melted butter.
It will make approx. 4 strudels
Peel, core and cut the apples into small pieces as shown.
Mix the graham cracker crumbs, sugars, spices, and vanilla extract. At this point taste, a piece of apple coated with everything to see if it needs more of anything. This is when you can customize the recipe to your liking...sometimes if the apples are tart, I'll add more sugar...bland...I'll add more spices.
Next, take the phyllo out of the box and lay the sheets flat.
Take one sheet and with a pastry brush...brush on the melted butter ( i couldn't find mine so I sprinkled it on)
Repeat the same step with 4 more phyllo sheets, placing each buttered sheet over the other......(average strudel is 5 sheets..if you use too many the strudel becomes doughy)
Now for the apple mix...spread about 1-2 cups of the apple mix horizontally across the sheets but not completely to the left or right-hand side edges and closest to you, not in the middle.
Fold over the side panels...left and right side
Next fold over the sheets at the bottom on top of the apple mix and roll
Then take the cover off and bake for another 10 minutes or until the phyllo is tanned in coloured.

You can sprinkle some icing sugar for a finishing touch...I like them right outta the oven!
